For many years the Kuban Cossacks lived next door to the mountain-dwelling peoples of the Caucasus, adopting many of their cultural customs and culinary traditions. As a result, Cossack cuisine developed a distinctly rich and bright taste. Cossack dishes are traditionally simple, fast and easy to make and include large quantities of herbs and vegetables.
