Stuffed peppers are eaten around the world. They're a favourite in Bulgaria, Romania, Georgia, Azerbaijan, and, of course, Russia. Each country has their own individual take on the dish, but it's always prepared in a similar manner: sweet bell peppers are deseeded, filled with rice and ground meat, and served with sour cream. But chef Vladimir Pavlov's recipe is in a league of its own. He uses very similar ingredients – there's meat, dairy, etc. – but puts them together in a completely new way. The peppers are stuffed with pickled cheese and served with a meat sauce. The taste is just as amazing, and this version is unusual, surprising, and even a bit exotic to boot.
