The Geography of Taste. Cucumbers and Beef Korean-style

The bulk of dishes in Korean cuisine are spicy. The amount of pepper used, however, is always so well balanced that the taste of the main ingredients are never drowned out, allowing even those who aren’t familiar with Korean cuisine to relish it. The words “delicious” and “spicy” have become synonymous in Korean cuisine. Spicy peppers were brought to the Koreans from South America by the Portuguese in the 16th century – that’s when the main approaches to cooking in the Korean cuisine that we know today began to be formed.
