The Geography of Taste. Pavlova Meringue Desert

Anna Pavlova was a prima ballerina at the Mariinsky Theater and one of the greatest ballerinas of the 20th century. The illustrious dancer was legendary even in her own time. Perfumes, clothing, and candies were named in her honor. And after the Russian artist toured New Zealand and Australia in 1926, Pavlova also became the name of a dessert made of meringue, whipped cream, fresh berries, and tropical fruit. The dish was so successful and tasty that it soon began to spread around the world, and New Zealand and Australia to this day have not come to an agreement as to where this sweet masterpiece in fact originated. Host of The Geography of Taste Vladimir Pavlov is not only a bearer of this famous name, but also has a rather refined sweet tooth. He has not taken sides in the conflict over the dessert’s origin, but instead has decided to develop his own version of the distinguished dish.
