The Geography of Taste. Fajitas with Chiken Hearts, Corn Souce and Guacamole

Fajitas are a symbol of Mexican cuisine. And the components that chef Vladimir Pavlov uses to create this spicy delight reflect Mexico’s palette – strips of meat, corn sauce, guacamole, and tortillas. Together, they give us a scrumptious picture of the colourful past of this North American country. In case you didn’t already know, a tortilla is a flatbread made from corn, and guacamole is a thick sauce from avocados. Both were a favourite of Mexico’s native people, the Aztecs, back in the 15th century. The Spanish conquistadors simply adopted their recipes. Fajitas were popular among the cowboys who lived in the borderlands between Texas and Mexico at the start of the 20th century. Corn sauce, however, is a modern invention, concocted by Chef Vladimir in the 21st century, especially for viewers of The Geography of Taste. Why corn sauce? Well, corn is a native of the area too… We guarantee you an interesting time, and the dish will certainly live up to its rich heritage: tasty, vibrant, filling, and of course, spicy! It is, after all Mexico’s turn to be the focus of Russian Travel Guide’s flavour map. On The Geography of Taste.
