Cossack-style dumplings

For several centuries Cossacks from the Northern Black Sea region have lived just next door to their Caucasian neighbours. As a result of their close quarters, a specific cultural exchange was born whose product can be clearly seen in Cossack cuisine. Host Rumiya Niyazova visited the city of Goryachiy Klyuch where she got to familiarise herself with the area’s filling and bright dishes and where she learned both the history and the main techniques used in the preparation of popular dishes like vareniki.
