The Geography of Taste. Sturgeon Solyanka Soup

Solyanka soup is a truly Russian dish. It was referred to back in the 16th century in the homekeeping bible Domostroi, a unique literary work. According to the unwritten rule, Solyanka is always made with three different kinds of fish. It was a Tsar’s Solyanka if it was made with sturgeon.
