One of the smaller peoples of the North Caucasus are Abazins. Their population makes up a little bit more than 30 thousand people, but nevertheless, they take good care of their language, culture and traditions, first of all, cuisine ones. The presenter Igor Vukolov visited one of the most popular restaurant «Castle of Insidiousness and Love». It’s located in the canyon of the river Alikonovka and this place is relating to a fairy-tale legend, which no one scenic corner in the Caucasus can do without. Only for one lesson Igor Vukolov has learned to prepare almost six Abazin dishes! As well as got to know the real reason for why women must always be let through.

Recipe Ashich

recipe serves 3 persons; cooking time ~ 20 minutes
Ingredients:
4 tablespoon fat cream, 200 ml. milk, 100 g. sheep cheese, 100 g. suluguni*, 100 g. flour.

Directions:

Blend milk with cream and simmer.

Cut suluguni and sheep cheese into small pieces. When milk with cream begin to boil put cheese in a pan.

Hold this in a little oil, stir continuously, until cheese dissolves in milk. Add flour by pouring it with a thin trickle into a pan.

Turn off fire after everything is thorough mixture. Leave ashich on the stove for 15 minutes.

*Suluguni is a pickled Georgian cheese from the Samegrelo region.
